Nothing tastes better, then freshly baked bread. My mother use to make delicious bread, in different shapes in clay oven. I Still smell aroma of the bread. Homemade butter and feta cheese was always good accompaniment with it.
Making yeast bread is not hard. Of coarse dealing with flour, yest, kneading and raising the dough is little bit of scary, but don't be afraid, you going to learn a lot of secrets about making bread.
I've been making bread for good twenty years. Every time I make bread I try use different recipes. The other day I made white bread, it was delicious.
5 1/2 to 6 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons salt
1 package active dry yeast
1/2 cup milk
1 1/2 cups water
3 tablespoons butter or margarine (I used butter)
1. In a large bowl combine 2 cups flour, sugar, salt and yeast.
2. In medium saucepan over law heat, heat 1 1/2 cups water, 1/2 cup milk and 3 tablespoons butter until very warm (120 - 130 degrees F). (Butter does not need to melt). With mixer at low speed, gradually pour liquid into dry ingredients. Increase speed to medium, beat 2 minutes, occasionally scraping bowl with rubber spatula. Beat in 3/4 cup flour or enough to make thick butter. continue beating 2 minutes, occasionally scraping bowl.
3. With spoon, stir in enough additional flour (about 3 cups) to make a soft dough. Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes.
4. Shape dough into ball and place in greased large bowl, turning over so that top of dough is greased. Cover with towel, let rise in warm place (80 - 85 degrees F.)until doubled, about 1 hour. (Dough is doubled when two fingers pressed lightly into dough leave a dent.)
5. Turn dough onto lightly floured surface, cut in half and cover with bowl for 15 minutes.
6. Grease two 9" by 5" loaf pans. With lightly floured rolling pan, roll one dough into 12" by 8" rectangle.
7. Starting with 8-inch end, tightly roll dough, jelly-roll fashion.
Pinch to seal, press ends to seal and tuck under, place, seam side down, in loaf pan. Repeat with remaining dough.
Cover with towel, let rise in warm place until doubled, about 1 hour.
8. Preheat oven to 400 degrees F. Brush loaves with 2 tablespoons butter, melted. Bake loaves 25 to 35 minutes or until golden. Remove from pan immediately, cool on wire rack.
Makes two loaves.
